Summer refreshers

Food has made its way to the top of my list of most favorite things ever. Food is really important to me. And health food is something that I completely geek out over. I love a fellow health-foodie! You know, someone who knows the difference between organic hummus and homemade organic hummus. Or someone who thinks that a junk food splurge is a bag of Hippeas or Simple Mills crackers. Someone who brings the non-cured meats and raw nuts on their charcuterie board.

But, I digress….

It is funny now, because I work at The Wellness Lab, which is where Clean Juice used to be. But, I was devastated when Clean Juice closed. I literally used to go there almost every work day. It was really important to me to support a local small business that was all about organic health food. My favorite thing on their menu was their frozen refreshers. I thought all was lost when they closed. However, I was wrong.

Turns out, if you have some fresh ingredients, some ice, and a really good blender, you’ll be able to whip up an amazing frozen refresher in literally no time.

Recipe: You can change your fruits and veggies, but basically:

1 cup of ice per serving

8 ounces coconut water per serving (buy organic coconut water - that only has 1 ingredient - coconut water!)

honey - 1/2-1 tsp per serving

Here are variations:

Cucumber Pineapple refresher - add fresh or frozen pineapple - about 1/3 cup per serving, and fresh cucumber - about 1/2 cup per serving.

Watermelon Strawberry refresher (shown above) - about 1/3 cup whole fresh or frozen strawberries per serving, and about 1/2 cup fresh, diced watermelon per serving

Strawberry refresher 1/2-1 cup whole fresh or frozen strawberries. This one can be so delicious! It’s really like dessert.

These are amazing in the summer to naturally replenish your electrolytes and to drink cooling fruits and veggies.
